Cafés of the health resort

Besides taking care of your health, we have also thought about the enjoyment of food by the residents and guests of Pärnu. For this purpose, a number of Pärnu’s cafés and restaurants have gathered under common auspices and developed a special health resort menu, and are referring to themselves in the anniversary year as cafés of the health resort.

The cafés of the health resort offer at least one thematic menu, which can be distinguished by its resort logo. This menu is characterised by the ‘breath’ of the Pärnu resort, where the old menus are used as inspiration. Since a health resort is associated with healthy waters and a healthy lifestyle, the principles of healthy nutrition – but definitely not a diet in its radical sense – are also followed when offering the thematic dishes.

The aim is to give the people the opportunity to taste dishes that are inspired by the recipes of the good old resort cafés. While a resort is associated with a healing vacation, then the dishes in the menu are also prepared from fresh and local ingredients.

On nutrition in the Pärnu resort over the years
Nutrition has always been one of the pillars of a healthy lifestyle. The bathers, who also came to Pärnu to take care of their health, were offered the best treats, the wholesomeness of which nobody doubts even today.

An important place on the food table of the resort during the first Republic was most definitely held by fish and fish products. Omega-3 fatty acids, found especially in seafood, help to prevent heart and cardiovascular diseases. It was a well-known fact that it is good to eat fish at least twice a week. For example, one could find the following savouries from the Rannahotel menu in the 1930s: Salad from lobster necks, lobster pureed soup, smoked and pickled eel as well as herring.

When I happened to see the menu of Rannahoone restaurant from 1980, I was astonished. The range of seafood included pike perch, eel, herring, lamprey, sprouts and naturally caviar! Do we have a catering establishment in Pärnu today with this kind of seafood assortment?

The main supplement was potato, from which puree or croquettes were prepared. But also domestic vegetables – carrots, cabbages, cauliflowers, beans, peas, turnips. In addition, spinach and asparagus were used! Even local forestry products reached the food table. For example, as a hearty breakfast the menu contained an omelette with boletus and spinach.

Most of the cakes had domestic eggs, butter and flour as ingredients. It catches the eye that using apple in cakes was really popular. Since there was great dependence on local ingredients, then desserts were prepared out of what was offered at the Pärnu market at the time. Be it rhubarb or seasonal berries and fruits.

Besides the more exquisite drinks, conventional sour milk was also not missing from the chart.

The difference between the vacationers of today and the past is that a modern health seeker wants to know more and in detail about the ingredients (fats, proteins, carbohydrates), and consciously avoids preservatives. At the same time, the food that was offered a century ago was in every way in line with the requirements set for a healthy food – it was fresh, diversified and predominantly 100% Estonian!
